Food sensitivity and/or food
intolerance is believed to be the underlying cause for many
gastrointestinal disorders as well as even behavioral disorders. Food
sensitivity is different than a food allergy in that usually, the sensitivity to
the food is caused by GI permeability whereby food molecules (usually proteins)
enter the bloodstream causing the body to treat the food as an allergen. What
results is GI discomfort, bloating, gas, diarrhea, or secondary problems, e.g.
behavioral problems, skin aberrations (acne, rash).
